  Recipe Baking: Steak - low fat - special diet  Directory    

   Recipe Baking: MICROWAVE SWISS STEAK


  3 tbsp. all-purpose flour
1 tsp. salt
1/4 tsp. pepper
2 lbs. beef round steak, cut into
serving pieces
1 med. onion, chopped
1/4 green pepper, chopped
1 (8 oz.) can whole tomatoes
1 (6 oz.) can tomato paste

Combine flour and seasonings in shallow dish. Coat meat in seasoned flour; pound into meat. Place meat in water-soaked clay pot. Place onion and green pepper over meat. Add tomatoes and tomato paste. Cover with water-soaked lid. Microwave for 10 minutes on high. Re-arrange meat pieces; recover. Microwave for 55 to 60 minutes on simmer or until meat is fork tender. Let stand 5 minutes, covered, before serving. Yields: 4 to 6 servings.

MICROWAVE CUBE STEAK

 1 lb. cube steaks
3 tbsp. dry onions
3 tbsp. minced garlic
1/4 c. Molly Mc Butter
Salt
Pepper
Water

Place cube steaks in microwave bowl. Add water to cover bottom of dish (about 1/4 c.). Sprinkle meat with onions, garlic and Molly Mc Butter. Place in microwave for 10 to 15 minutes, turning meat every 3 to 4 minutes. Add salt and pepper to taste.
