Recipe Baking: GREEN PEPPER STEAK
1 lb. beef chuck or round, trimmed
1/4 c. soy sauce
1/4 c. salad oil
1 c. green or red pepper
1 tbsp. cornstarch
1 clove garlic
1 c. green onion, sliced
2 stalks celery, sliced
1 c. water
2 tomatoes, cut up (go in last)
Cut steak in 1/4 inch thick strips. Combine soy sauce, garlic, ginger.
Add beef; toss and set aside. Heat oil in frying pan; add beef. Use high
heat until browned. Turn down heat. Cover and simmer 30-40 minutes. Then
add vegetables; stir-fry until vegetables are tender. Crisp about 10
minutes. Mix cornstarch with water. Cook until thickened. Add tomatoes
but do not cook.

SALISBURY
STEAK, ONION GRAVY
1
(10 1/2 oz.) Campbell's condensed
onion soup
1 1/2 lb. ground beef
1/2 c. fine dry bread crumbs
1 egg, slightly beaten
1/4 tsp. salt
Dash pepper
1 tbsp. flour
1/4 c. catsup
1/4 c. water
1 tsp. Worcestershire sauce
1/2 tsp. prepared mustard
In bowl, combine 1/3 cup soup with beef, crumbs, egg, salt and pepper.
Shape into 6 oval patties. In skillet, brown patties; pour off fat.
Gradually blend remaining ingredients; stir to loosen browned bits.
Cover; cook over low heat 20 minutes or until done. Stir occasionally.
