      Recipe Baking: STEAK AND SPINACH PINWHEELS


 
 8 slices bacon
1 (10 oz.) frozen chopped spinach,
thawed and well drained
1/4 c. grated Parmesan cheese
1-1 1/2 lbs. beef flank steak OR
boneless top round

Cook bacon, not too crispy - drain. Score steak by making diagonal cuts in a diamond pattern - both sides (not too deep). Pound steak with meat mallet, into a rectangle (12 x 8 inches), work from center to edges, sprinkle with salt and pepper, arrange bacon lengthwise on steak. Spread spinach over bacon, sprinkle with Parmesan cheese. Roll up from a short side, secure with toothpicks, at 1 inch intervals - cut between toothpicks creating pinwheels. Broil 3 inches from element, approximately 6 minutes, turn and broil additional 6 minutes. .
